Merlin's Magic Fried Chicken


A while back I was working on packing up some of the items I wanted to keep at my parents house and I came across Walt Disney's Mickey Mouse Cookbook. This is a cookbook I can always remember being in our kitchen but I'm not quite sure we ever cooked from it. Put into print in 1975 you can only find used copies now. It's great for a beginner cook and most of the recipes are super simple but you can find some recipes that scream 1960's and 1970's, I went for an easy one and might brave those another night!!

Merlin's Magic Fried Chicken

Ingredients:
1 tsp shortening (didn't have any so I used butter, hopefully that's ok!!)
1/2 C all purpose flour
1/2 tsp paprika
1/2 tsp salt
2 1/2 lbs chicken pieces (decided to change it up and do thighs and legs)

Directions:

1. Preheat oven to 425 and grease 13x9 pan

2. Put flour, paprika and salt into seal-able plastic bag. Close bag tightly and shake to combine the ingredients.

3. Put 2 to 3 pieces of chicken into the back and reseal. Shake the bag for about 5 seconds and make sure that the chicken is entirely coated.

4. Repeat until you have coated all the pieces. Put them on the pan with the skin side up.

5. Bake for 55 minutes or until the chicken is golden brown on the out and tender when you pierce it with a fork.
