Waiting is the absolute worst thing ever. Especially when you partially know something and want to share it but don't know the rest and can't share until you know. It's awful! HATE IT!
I don't want to say too much about the weekend. Just that I've decided that myself and Peoria just do not work. Some of the issues worked themselves out, mostly because I didn't do anything and it was a misunderstanding. The other stuff is just stuff one deals with since you're stuck with your family.
So instead I will share with you one of my go to recipes! This is actually a recipe from my Grandma Giles, my dad's mom. As I was thinking about what to write regarding this recipe I was thinking about a lot of the memories I have with her. Quite a few of the things that trigger a lot of memories are the smells and tastes of different foods. My brother and I used to spend at least a week at her house every summer. Pretty much every night we would make air popped popcorn, she had one of the cool dome poppers where you could see the kernels being popped and as soon as one would pop we would pretend we were being shot. Air popped popcorn and root beer floats mmmmm. Every single time I eat either of those I think of sitting in my grandma's living room and staying up so late to watch the news.
This dish I don't actually has a name in our family so I will call it ...
Grandma's Mac & Cheese Casserole
1 lb. ground beef, whatever % your preference is (you can also use turkey too)
1 box Kraft Mac & Cheese (with milk & butter to make it)
1 can tomato soup
Seasoning for ground beef ... I prefer garlic and onion powder
1. Brown ground beef. Flavoring it how you like.
2. While cooking beef pre-heat oven to 350 degrees. Also start to boil water for the pasta.
3. Cook pasta according to package. After meat is cooked drain and set aside in casserole dish.
4. When pasta is cooked finish up Mac & Cheese according to directions on the package. ***
5. In same pot add can of tomato soup to finish Mac & Cheese. Combine.
6. Take Mac & Cheese mixture and pour over ground beef in casserole dish.
7. Cover and bake for 30 minutes. If your dish doesn't have a lid tin foil is a great back up.
8. Remove from oven & mix it all up.
9. ENJOY!
*** When my brother was younger he couldn't drink milk for a while so my mom would just use more butter instead of milk to make the Mac & Cheese. It works out great. We barely ever have milk because Kevin can't drink it so when I forget to get some butter works out great.
This dish is a great one since it has so little ingredients you can always keep them around for a last minute meal. Plus the left overs heat up great! Well if there actually is any left over : )
